Love it! I added kale (put it in with the rice in the last step) for some extra color and texture.

The ingredient of Chickpea & Rice Soup

  1. 1/2 cup brown rice uncooked, or 1 1/2 cups cooked, I use brown Basmati rice, but really any rice should do just fine
  2. 1 tablespoon olive oil
  3. 1 tablespoon butter
  4. 1/2 yellow onion medium, diced, about 1 cup
  5. 2 carrots medium, peeled and diced, about 1 cup
  6. 1 stalk celery diced, about 1/3 cup
  7. 2 cloves garlic minced, about 2 teaspoons
  8. 1/2 teaspoon dried thyme
  9. 1/8 teaspoon turmeric
  10. 1 bay leaf small
  11. 1 pinch red pepper flakes
  12. 1/2 teaspoon kosher salt
  13. 6 cups vegetable broth
  14. 15 ounces chickpeas drained
  15. salt
  16. ground black pepper
