  1. 6 cups fish stock or water
  2. 2 tablespoons oil
  3. 2 tomatoes peeled and diced
  4. 1 onion chopped
  5. 4 cloves garlic coarsely chopped
  6. 1/4 teaspoon saffron threads
  7. 1 pound potatoes peeled and cubed
  8. 1 1/4 cups rice
  9. 1 pound white fish fillets firm, such as cod, cut into large cubes
  10. 2 tablespoons chopped fresh cilantro

The instruction how to make Rice, Potato and Fish Soup

  1. Combine stock, 2 tbsp oil, tomatoes, onion, garlic and saffron in a large saucepan. Bring to a boil on medium heat. Reduce heat to low and simmer gently for 15 mins, until reduced slightly and fragrant. Add potatoes and rice and simmer for 20 mins, until tender. Season to taste.
  2. Meanwhile, heat 1/4 cup oil in a heavy-bottomed skillet on medium heat. Cook fish, turning, for 4-5 mins, until just opaque.
  3. Ladle soup into bowls. Top with cooked fish and sprinkle with cilantro.
